I loved this dish. I love foie gras in any way. Seared, in a terrine, parfait. Delicious. I was a bit skeptical about it accompanying the yellowfin tuna but the two textures of the soft and slightly crispy seared foie and the seared tuna worked well together. The reduction was great and there wasn't too much of it so the flavors of the foie and tuna came out without the sauce overpowering it. I just wish there were more. I probably should have ordered another plate of it.
